Mason Jar Salad Recipes!

Mason Jar Salads

Since posting the mason jar salad technique I have been getting a lot of requests for some specific salad combos. For those of you who don’t consider yourself “creative” types I have created three mason jar salads just for you.

To be completely honest, I used to struggle with creating my own combinations so hopefully these will help get you started and even inspire you to make your own awesome combinations!

For all the salads below layer ingredients in the order they are listed. You don’t have to use mason jars but they are fun and keep everything from getting soggy. If you choose to make them ahead in a tupperware, keep the dressing separate until you are ready to eat.

 

Greek Quinoa and Kale

  • 1 1/2 tablespoon dressing (Greek or balsamic works best)
  • 1/3 cup diced bell pepper (any color you prefer)
  • 1/3 cup diced cucumbers
  • 1/3 cup diced tomatoes, or grape tomatoes, halved
  • 1/2 cup cooked quinoa
  • 3/4 cup diced chicken
  • 2 tablespoons feta cheese, crumbled
  • 1- 1 1/2 cup salad greens (I used 1/2 kale and 1/2 romaine)

Clean Chicken Taco Salad

Avocado Dressing

  • 2 tablespoons plain Greek yogurt
  • 2 tablespoons avocado, mashed
  • Juice of 1 lime
  • 2 tablespoons salsa (green or red)

Mix all ingredients with a fork to incorporate. Blend or mix in a food processor for smoother dressing

Salad 

  • 1/2 of dressing (feel free to use it all, I just don’t like a lot of dressing)
  • 1/3 cup bell peppers, diced (raw are fine, roasted are best)
  • 1/4 cup corn
  • 1/4 cup black beans
  • 1/3 cup diced tomatoes, or grape tomatoes, halved
  • 3/4 cup diced chicken
  • 1-1 1/3 cup romaine lettuce

Chicken, Apple, Walnut Salad

  • 1 1/2 tablespoon dressing (balsamic works best)
  • 1/3 cup diced tomatoes, or grape tomatoes, halved
  • 1/2 cup diced apple (Fuji and gala works best in this salad)
  • 3/4 cup diced chicken
  • 2 tablespoons chopped walnuts (if you don’t like walnuts, use what you like)
  • 1- 1 1/2 cup salad greens (I used 1/2 kale and 1/2 romaine)

These are great for meal prep day because they stay fresh all week!
